Bananna Bread
Everyone loves this stuff.
Ingredients
Mix together in LARGE bowl:
- 4 cups whole wheat flour
- 2 Tbls wheat germ
- 2 tsp baking soda
In a food processor combine:
- 1 cup walnuts (I chop them fine)
- 1 cup raisins (I chop them up too)
- 4 cups mashed ripe bananas (about 8 bananas! I use my 4 cup measuring cup
and smash them with a mashed potato masher, and they must be REALLY RIPE!!!)
- 1 cup honey
- ½ cup unsweetened fruit juice (I used pomegranate/cranberry
- 2 tsp vanilla
- 6 tsp Ener-G Egg Replacer, mixed well with 8 Tbls water (you want it to
froth up a bit)
This maxes out the food processor. I think next time I will dump out the
walnuts and raisins into the dry ingredients before putting the rest in the
blender.
Pour evenly into two 8x5 inch nonstick loaf pans.
Bake 350 degrees for 45-55 minutes (that is what the recipe says, but it
takes longer until the toothpick comes out clean!)
Cool in pan for 10 minutes, then loosen sides with a knife and cool
completely on a wire rack
