Almond butter and fruit granola bars
Cindy and I make these for our kids because it seems healthy and the
kids like 'em.
I get most of the ingredients from Whole Foods.
Ingredients
Quantities are approximate!
1/4 - 1/2 cup of chopped walnuts
2 banannas
1 cup of date pieces
1 cup of cherries
1 cup dried apricots
1 cup raisins
1 cup almond butter
1 1/2 cups of rolled oats
1/2 cup of olive oil
1 cup flour
1 teaspoon baking powder
wheat germ
1/2 cup of yogurt or milk
Also:
1/4 cup honey
1/2 tsp cinnamon
1/2 tsp vanilla
Now do this:
- cut the fruit into small bits
- In food processor: grind the nuts fine with metal blade
- switch to dough blade, add fruit, almond butter, bananas and then blend
- Add the oats, flour, baking powder, wheat germ, olive oil and enough milk to make it blend together
- Add in honey, cinnamon and/or vanilla
- add the fruit bits and stir
- press into a 8x8 baking pan
- cook at 325 degrees for a half hour or so, maybe 40 minutes
- cool, slice and store in tupperware in the fridge
